When the grenadilla billets are first machined to a cylinder, they have a pilot hole drilled through the middle. Then they're put aside to season until being machined to the finished external shape and the bore opened up, but still undersize.
In between these two operations the wood can still move so the entire cylinder can warp. The ends of the cylinder are centred on the lathe using the pilot hole ends to locate the cylinder (which are still on centre). Even though these line up between centres, the bore is still warped and the external shape is then machined - so you end up with a straight joint and curved bore.
But the wooden Bundy oboes I've seen here in the UK have been warped on the outside as well. So either the UK climate has caused this, or the wood isn't all that stable depending on how long it has been seasoning for, or has been kiln dried to speed up the process.
