Dutchy --
I think you probably have very perceptive ears.
You are likely right, that each note does have its own "character" -- and what we do when we play a piece, is to create an illusion of "line" by making subtle (eventually automatic) adjustments in breath and embouchure as we move from pitch to pitch.
Particular instruments and particular reeds may make this task easier or more difficult.
We've just talked about the fact that the more stable reeds enable us to play a more consistent note series (a.k.a "line"). Some oboes, as well -- the really good ones -- are known for having "a very even scale". These would be the ones that are inherently easier to keep in line, tonally. And that's probably why folks are willing to shell out the big bucks for certain instruments (and certain reeds).
Struggling to keep my own sound consistent from pitch to pitch, as I play with a regional wind ensemble, has led me to really appreciate the accomplishment of professional orchestral players.
The price of music is eternal vigilance?
