Ah yes, the famous Gabriel's Oboe video. If you'll observe carefully, you'll see that it has been edited, with dissolves, fades, and other moviemaking tricks, so as to never show her mouth on the oboe reed for more than a few seconds. You're only assuming that you're seeing her play for 2 minutes without opening her mouth to breathe, but actually, you're not. There are rests and breaks in the music, even if they're only an eighth-note long, and rest assured, she IS opening her mouth to breathe. The film's editor just isn't showing you those parts, is all, because it's not as artistic to show the lovely oboist doing the gasping whale-spout thing.
She also uses a jaw vibrato (see closeup at minute 2:04) which my understanding is that it's less than desirable. Vibrato should come from the air column, propelled by the diaphragm, like a singer does, not from wiggling your head and jaw.
So don't necessarily take her as an example of "how to play".
