How do we know what sharp really is? I thought my knives were sharp until I was at a knife sharpening demonstration put on by Thomas Blodgett. Then I found out what sharp really was. I was able to make reeds with my old way of sharpening (we all adapt), and I had no idea how much sharper it could get, and how much easier it made reedmaking!

I have now sharpened knives for other double reeders and every one has said it is the sharpest knives they have used. One professional oboist has given me 15 knives to sharpen. She would actually purchase a new knife after she was no longer able to get it sharp. She has 30-40 knives!

As for the burr/bevel/hook or whatever you want to call it. In my opinion it has to exist (strictly talking about double hollow ground knives). That is why there is a difference between left and right-handed sharpening. The finer the stone, the smoother the burr. My finest stone is a 15,000 grit ceramic stone.

As you scrape eventually the burr starts to bend back. If you use a smooth steel or burnishing rod you can actually move the burr back into place without removing any metal. This is probably what the ceramic sticks are doing but there is some metal removed. And as been said before this can be done several times before actually sharpening again.
