I was REALLY not expecting this much activity (I hope it's enthusiasm  :) ) about this post!

Seeing as some members do want clarification, here's my part:

For me, a double-hollow-ground knife is good for shaving my face (I used one for a while), very delicate and fine chopping (e.g. the reed tip) and not much else: no resitance to sideways cutting means even the best will get damaged.

Take for example, my Graf folding and another knife can be considered double hollow ONLY because they have concave sides... more accurately, they are straight in design (as per my diagrams) but concave (slightly hollow) for ease of sharpening.
=> let no one say that the Graf folding is not a proper reed knife! And I'm certainly not the only oboist who sharpens it this way.

The 1 real beveled knife I own (Pisoni, cheap, but surprizingly good) I had to grind such shallow hollows (in the bevel and the flat side) because it was too hard to sharpen.

In fact, these knives, I always give a "2nd bevel" (really their 1st bevel for the Graf and such) for 2 reasons:
1. it gives the blade a little more resistance to digging (snagging)
2. it is slightly quicker to hone: but I have to flatten the extra bevel for reasons mentioned in my book (hard to keep the same angle).

So I make no pretense at understanding your notions of "folds" and "burrs" - evidently we are talking about different things - because in my experience, they are rough leftovers that will rip off your skin even when you pull your kife in a contrary-to-cutting motion => what I'm talking about can't possibly do a good job fine-tuning the blend and the tip.

This being said, it's likely that what you call burrs are pretty much the result of the same care (on double-hollow) I give with my finest stones in order to get my beveled knife sharp enough to shave my forearm. I just don't get that bend over because I don't use that technique on double-hollow.
