Aspiring reedmakers with backgrounds in woodwork often struggle more than those starting from scratch, because they have to unlearn much of what they've learned. That's hard to accept, so it's a common obstacle. The sharpening methods you've described are correct for some other tasks, yet inapplicable to reedmaking.

If you want a cutting edge, burrs are bad. But reedmakers seldom cut. We scrape. Each knife stroke begins with the blade approximately perpendicular to the cane. As the knife pivots and the edge moves forward, the burr glides across the surface of the cane. This is how we achieve the precision necessary to balance and refine reeds.

A well-sharpened reed knife does NOT act like a gouging blade or a woodworking plane. They are different tools with different functions that require different sharpening methods.

A reed knife should NOT shave hairs off your arm. If it does, it is incorrectly sharpened. You can't scrape precisely with such a tool, just as you can't efficiently hammer nails with a screwdriver.
