When one of my students picked a used instrument last year, we met with another professional oboist and both he and I played the instruments for her, then she played. She had narrowed it down to 3 choices, and all three of us agreed which one was the "winner". Really helps to have a 2nd (and 3rd!) set of ears - so you can hear the oboe at a distance.
That being said, each one of us sounded like "ourselves" on the instruments. I think there was more of a difference in the musicians than the instruments if you follow - I always sound like me on whatever oboe I play. Even with terrible reeds! I find it amazing that others in my quintet can't tell I'm struggling with reed problems.
Finally, RECORD the same thing on each oboe and LISTEN to the recording, you may be shocked by this exercise.
So get all the input you can, get as many oboes to try as possible, but it really comes down to how you feel playing it. You will still sound like yourself, but getting the best sound for your budget is the goal. Good luck!
