Echo John's advice here.
In my experience, "Popping the ears" is done in two stages, first coarsely, and then a final adjustment.
After soaking your gouged/shaped/folded cane for the requisite amount of time, hold the cane in a tight "vee" by the edges of the narrow end, and place the flat of a bevel knife under the ears, flat with the shaped sides of the cane. A gentle push will take off most of the ear. Don't bother with the rest just yet.
Flip the cane over and repeat for the other ear.
Now tie on - it is much easier to tie straight without ears (probably because sounds won't distract you :-)
Once tied on, before thinning and clipping open, use the flat of your bevel blade against the shaped sides to shave the remains of the ears until the shaped edge is a perfectly continuous curve. Don't overdo it!
Then you scrape down the extreme tip, clip open, set the overlap and leave to dry for at least a day.
