I would recommend the following items for adjustments
flat, blue-steel pointed plaque
French Razor knife, otherwise known as a Rigotti Double Beveled
German Double Beveled Razor Style knife, otherwise known as a Philly Herder Style knife
You can get any of these three from many dealers such as Midwest Musical Imports, Forrests, Chudnow, and RDG.
I haven't noticed any difference between the Rigotti Double Beveled and a French Razor style knife. I have noticed a difference in quality between the RDG German style knife, the Philly Herder knife available from Midwest Musical Imports, and Albion knives available at Forrests. Of the three, Philly herder have the best quality steel, and the RDG are a bit too brittle for me, so I use the albion, but I have had those chip.
You also need to look into different sharpening mechanisms. My favorite is the Raz-R Finishing Steel which sets the edge just right. I never really need to sharpen my knives on a stone. I just use the finishing steel item.
