I'm old-school when it comes to cutting things.
My favourite finishing stone is a double-sided ceramic stone you get in hunting/fishing stores. "Spyderco", made in the USA. => no oil, water or anything. Clean once in a while with regular kitchen scouring powder!
Of course, every once in a while, knives need their bevel flatened (the one you put in yourself), for that, there's no beating the Norton India Fine stone (needs oil).
