Single reed instruments are closed-ended: if there was no curvature in the mouthpiece (the reed just mimmicks the mouthpiece shape) no vibration could be produced. The vibrations essentially "stop" at the mouthpiece when they are reflected back. The curvature creates an opening that permits vibration. I.e...when you look at single-reed instrument, the blade of reed doesn't press against the mouthpiece

Because double reeds don't have a surface that stops vibration (i.e the mouthpiece) they are considered open-ended. In contrast to the single-reeds, where the blade must be seperated from the mouthpiece, the double reed must press tightly all the way to its tip. A curvature in the tip (with the center protruding out longer than the sides, i.e. single reeds) would prevent this from happening.
