It's certainly true that how the tip narrows from the place which corresponds to the tip of a finished reed to the place that corresponds to the top of the string will make a huge difference in the overall playing characteristics of the reed. BTW, the Adam shaper tip people refer to the section of the tip that corresponds to the tip and middle of the reed as the "chimney" and the portion between the chimney and the string as the "throat." The "belly" is where the throat and the chimney meet.
For me, it would be difficult to make a reed that plays up to pitch if my shaper were 7.3mm or even 7.1mm wide at the tip, although it's certainly possible. The widest tips I have are the Pfeiffer copy of the Brannen X and a Weber 1C, both of which are very nearly 7mm at the place where the tip will finish. The narrowest that I have is the Weber 1B which is about 6.8mm at the same place. I can make reeds that play up to pitch and have good pitch in the upper octave with a wider shape, it's just more difficult.
Generally, a wider tip is lower in pitch. You can compensate by having harder reeds, a more closed opening, and/or shorter staples.
