Corey,
It is really very hard to tell what is causing you to play sharp without being there. A teacher should be able to answer many of your questions. For now, here are some things to try to bring down the pitch:

1. Make sure your reeds are in good shape, brand new reeds should play in tune, and old ones will eventually go flat, although each reed is different. Also, do not pull the reed out more than 1mm. Doing this will result in some notes not speaking properly. It might not affect the entire range of the oboe as well.

2. Check the overlap on the reed. It should be slightly overlaped to the right, but too much overlap can cause a reed to go sharp. Carefully and gently shift and hold the reed to the left for a few seconds. This will result in a larger chamber in the reed and it might make it slightly flatter.

3. Try dropping your jaw and making more of and "o" shape with your mouth. This will not only help smooth out your pitch, but it will also give you a better sound.
