I agree with your final paragraph, Shawn. I think Bach's music, if handled with integrity and musicality, can be played or sung by what ever group or instrument.
I remember the Swingle Singers (are you old of enough to remember them?) did some wonderful "jazz" renditions of Bach. They were delightful. Many great pianists have done wonderful performances of pieces originally written for harpsichord. Ferruccio Busoni transcribed tons of his works. I'm rehearsing several settings of Bach works transcribed for double-reed quartet by Sergio Crozzoli. They're great and wonderful fun to play.
I'm sure the list is endless of good transcriptions of Bach's music for different instruments and musical groups. So go for it!
