I've been doing some work on this, mostly numerical modelling, but it isn't in presentation form yet and the math gets a little hairy.
For a really basic introduction, you might look at Arthur Benade's book, "Horns, Strings, and Harmony". It's available in a Dover edition, so it's inexpensive.
The web site JRC mentioned is excellent, and here's another link which I like but may be a bit more mathematical:

You are probably going to need a high school or introductory college physics course which covers wave phenomena before the acoustics of oboes makes much sense.
