Saint Saens 2nd and 3rd movement would be ideal. The 2nd movement gives a good amount of rubato opportunity, and then moves into an in-tempo metered somewhat lyrical, somewhat stylistically quick piece. It's more complicated than it looks and if you're musically up for it, it could show a lot of skill.

If you can play the 3rd movement even relatively fast, it'd show the technical skill they want to hear: clean tonguing, scales and fast fingers!
