Hello All:
I have tried quite a few types of knives over the years. By far the best for my taste are the Landwell Knives from Canada, which I have used for about ten years. I understand they were developed as part of a post-grad engineering(?) project in Calgary(?), Alberta.
The steel is of high and appropriate quality, the knives hold their edge for a long time, they are easy to sharpen and they are readily available. Bevelled Landwells are available for either right or left hand use (great for me, 'cause my left-handed wife won't swipe my nice sharp knives for her reed-making!!). Hmmm... maybe she thinks the same about me and is equally protective of her Landwell knife.
I use two Landwell bevelled knives for everything except cutting off the tip, for which I use a Landwell double hollow ground unit or my old home-made straight-razor (40 years of use now!). Landwell knives are not cheap to buy, but, in my opinion, they are an excellent investment. Good tools are never cheap, though, are they?
