There is no hard and fast rule when it comes to knives. I do not buy into the need for different blade types. I own a bevelled knife from Bhosys and that is the knife I do my rough work with. Every other knife I own is a double hollow ground and work the best for me. I would suggest using a Vitry knife if you are just starting out. They are really easy to sharpen and are realatively cheep. Knives like Landwell, Graf, and the Ando Japan knives are all quite good but seem more expensive than they are worth. Don't be fooled by the claims of knife makers-the steel for reed knives has deteriorated since the old Philadelphia Herder knives. I would suggest buying a couple of knives so you have a back-up in case you can't put a decent edge on one. As far as handle materials it doesn't really matter. Hopefully you are starting work with a teacher who can help you, if not, you will feel like you are out to sea.
