Any decent knife (i.e., $20 or more) will be made of good steel. Far more important is how the handle fits your hand. That's completely individual, and the only way to find the right one is to try them out.
For many years, I've used a knife with a Vitry blade that's flat on the side facing toward me and hollow-ground on the other side. The handle (wood, round and slightly pear-shaped) fits into my palm perfectly. I recently got a Landwell beveled knife, and it feels great, too.
