I have a publication from Concordia Publishing House called "Five Hymn Preludes for Oboe and Keyboard", arranged by Brian Henkelmann. It's based on well- known "classical" hymnody -- Hyfrydol(aka Love Divine, All Loves Excelling/ Alleluia! Sing to Jesus), Liebster Jesu (aka Dearest Jesus, at Your Word), Nettleton (aka Come Thou Fount of Every Blessing), Picardy (aka Let All Mortal Flesh Keep Silence), and Resignation (aka My Shepherd Will Supply My Need). Keyboard parts are quite accessible, but interesting -- multimeter, syncopation -- not just straightforward transcriptions.
You might also take a look at the catalog from Morningstar Music publishers. I seem to recall that they have a number of oboe/choir (piano or organ accompaniment) selections.
By-the-by, there are also a good number of handbell pieces that include an oboe soloist. (Racking my brain to remember the name of the one I played last year -- I'll post it if it comes to me later.)
