What a great idea. There is a restaurant near me, The Green Room at the Hotel DuPont in Wilmington, that has a harpist on a balcony playing all through the evening. If you had the musicians far enough removed like that (otherwise it would be too loud for comfortable dining), I bet it would go over much better than the small amplified jazz/pops combos you sometimes see in restaurants.
