But the oboe d'amore is pitched in A which will add three flats to (or take three sharps from) any given key signature, and Baroque music didn't generally venture into keys with more than four sharps or flats.

Baroque oboes didn't have low Db or low B (lowest note was C) and were only chromatic from low D upwards, and the 4-keyed bassoons only went down to low Bb diatonically by descending G,F,E,D,C and Bb - all the semitones in between them were done by 'cross' fingering (with just the left thumb!) and half-holing so the tone quality of the semitones would probably be muffled or they'd be on the sharp side in pitch.
