I sort of approached this topic before, but here goes...
More often than not, YOU are the one that is changing. When reeds all of a sudden feel hard, it is more because the weather has changed how your blood is flowing and especially the dilation/contraction of blood vessels in the embouchure area. The reeds do change, don't get me wrong, but take comfort in the fact that, if you get really strong in practice sessions, you WILL overcome any sudden changes without adjusting the reed. (Only if for some reason your knives aren't working) This greatly takes some unpredictability out of the equation...(i.e. OMG will I have reeds for thursday?!? What will the weather gods do?!)
However, do take matters into your own hands. If the reeds don't work, fix them...because you can! The best way to improve the reed in a weather flux is to thin only the very edges/extremities of the tip. AVOID AVOID AVOID the centre of the tip. ONLY the edges. If you do this operation with a properly sharpened knife that will cut, but not tear up cane, it will improve response and stability enough to get you through. Also, it shouldn't weaken the reed too much. You should still be able to use for a while after.
