Regarding reed choices, you are lucky to be doing this at a time when better reeds are available than ever before.
When I taught young learners oboe I always provided them with reeds I would use meaning pro quality reeds.
So, not soft or graduated by resistance. They learned quickly and many of my HS students played better than some of my 1st or 2nd year conservatory students.
The problem with soft, etc., is they encourage or actually create some very bad habits.
'Hard' Vs. 'Med' Vs. 'soft' really has no valid place in the oboe concept.
If you get a well balanced reed, it will require no biting and while air pressure 'resistance' does vary a bit reed to reed, it is really a small range when things are done correctly.
To build air support from your diaphram and lungs, progress from blowing air into a straw in a milkshake ( then enjoy the shake) to blowing up small balloons.
If you can separate that function ( your body's contribution) from the reed's, you will do yourself a big favor.
