Being new to reed making, I was really struggling with the same thing, so I now leave the mandrel in for the heavy duty scraping. I have small hands but really long fingers, so it makes me feel a little less unco-ordinated. Jhoyla's advice about finger position seems to be what I do as well. I find I don't need the mandrel if I am doing small adjustment work, just the long periods of initial scraping. I tuck my supporting (mandrel) arm/elbow into my side and that seems to give me good stability.
