One thing that I've discovered in reed-making (personally!) is that you almost inevitably get what you pay for. I have never been able to get even a decent edge on a Vitry knife, but then again I've heard that the older ones were decent. The new ones are pretty bad though. A great knife that's not too expensive is a Mark Chudnow double hollow ground knife. You can get it from Mark Chudnow woodwinds. Personally, I think the quality of the steel is a direct reflection on the price of the knife, and in my opinion there is absolutely no substitute for a good piece of steel and a sharp knife. But I'm sure others will disagree with this! Unless you're a really serious reedmaker, I wouldn't suggest shelling out the $100 or so for a new Landwell or anything like that.
One thing to try is to ask some of your oboe friends if they have any old knives that they'd like to sell. They can give you an idea of what you like and they'll usually last for a while if you're not using them that often.
