The Vitry knives are quite inexpensive and I've used both the hollow ground and the wedge types, finally mostly using the wedges. The hollow ground ones may chatter a little when scraping and become more wedgelike with years of sharpening. I've made knives from old razors but they also chatter a little as they are hollow ground.
Right now, I'm using a home made knife ground from a #2 VF Nicholson file with a rather large wedge angle. It is made from very hard steel and hardly ever seems to need to be sharpened. This takes a little skill to make but you may have a friend who could make it, adding a nice wooden handle with a gemstone in the end. Surplus stores or swap meets may have old files at a low price.
