The Fossati is a better long-term investment (especially when it comes to part exchanging later on when upgrading) and a better instrument generally than a Noblet oboe.
Do you know which model (or equivalent model) oboe the Fossati one is? I'd hazard a guess it could be one of the Tiery models - most likely the J10 which is a lower intermediate model with very similar (although slightly higher) keywork specs as the Noblet http://www.fossati-paris.com/instruments.php?ref=HautboisTieryJ10J20. Noblets lack the 3rd 8ve key, LH F key, articulated low C# and low Bb bell vent that the J10 has.
Though if it is the E30 http://www.fossati-paris.com/instruments.php?ref=HautboisTieryE30E20 then that will be a very good long term investment if it's the same price as a Noblet as it is a much higher spec oboe with all the gadgets found on pro models - you'll get more mileage out of this than a Noblet.
