Hi, Walter. The easiest way to avoid a concave edge is to use a stone as wide as the reed knife, so the entire edge of the blade is in contact with the stone for the entire duration of each stroke. I like the 8" x 3" Norton Bench Stones. I use a coarse silicon carbide stone for grinding and a fine aluminum oxide stone to establish the scraping burr.
