"Over the years"? good grief ...
Knives are disposable. As soon as your knife gets hard to sharpen, chuck it out and buy a new one. This is what Dr. Hiramoto of North Texas Oboe Reeds has to say (in his charming and excellent reed-making primer called "A Portrait of the Reedmaker as a young Oboist"):
"Regarding knives ... the important thing is that you are able to maintain an effective cutting edge without having to spend a great deal of time sharpening. Knives are disposable - I go through six to eight knives a year. ... A dull knife will be at the root of 90% of your reedmaking difficulties."
Get a new knife!
