On the cold reading...otherwise known as sight reading. It is something you get better at by doing it; that is, you have to include sight reading as part of your practice. Don't play something more than once, because then it's not sight reading any more. It's a brain-to-fingers thing and does improve with practice. I've learned a bunch of clefs for various instruments I play, and it takes me about three months of sight reading to get the brain translation to fingerings for the clef I'm reading on the instrument I'm playing.
If you practice sight reading, over time you won't get that "brain freeze" reaction and it will go better for you.
