It's the shape of the scrape - the American scrape is usually a long W scrape, the Europeans mostly use a U scrape (and some favour a V scrape).
The U scrape is fairly short and gradually thinned towards the tip (as is the V - almost like a clarinet or sax reed), whereas the W scrape is much longer down the length of the reed and has a long, even tip.
The letters refer to the shape of the pithy area left behind where the bark has been removed, roughly making a U, V or W shape.
