Several folks have shown me how to sharpen my knives, and all I can say is what seems to work best is what an old timer (not an oboist) showed me this past summer at camp. For the bevelled knife, he laid it absolutely flat against the steel (no tipping, no angle) and moved it in a circular motion.
For the hollow ground knife, he raised it just a tad on one side, and did the other side flat.
I have no idea whatsoever if this is "standard" practice or not. At this point, I prefer to use the bevelled knife, simply because I don't have to guess at the best sharpening angle.
