It sounds like you have a good setup going. Be warned, those diamond stones do wear down faster than you think, although they do tend to keep their integrity. They do need to be cleaned every now and then. You can use water and a wire brush. (The wire brush will wear down.)
1,200 (or about 13.3 microns - that's the size of the abrasive particles) is really only a medium level stone. Have you ever thought of refining your knife to an actual fine level such as #5,000 grit (or about 3 microns) or finer? There are stones now that go all the way to #30,000 grit - or 0.5 microns. You'd be quite surprized at the difference....
