Not sure what you mean by "differences in the relationship between the musician, the oboe, and the reed". What differences are you refering to?

I would say "Yes", to some degree. If something is off, such as the intonation on a different oboe, or being uncomfortable with a different reed, then surely the audience would be able to notice it, unless the player is a very flexible player.
