Too complicated! Too complicated!!!
You stop the air flowing by putting your tongue on the reed - plain and simple, no secrets! The tongue is the valve that stops/allows air going through the reed. Done in a rhythmic fashion, this is also known as tonguing! :P:P
The difficulty lies in controlling this at different dynamics. If the tongue flies too fast at the reed, there will be a thud. If you let the air die away before the tongue has even reached the reed, there will a sagging wimpy sound at the end.
Practice, and experiment...and do those long tones!
