All that said, when I first read your 'Attempting to hand shape some cane' comment, I took it to mean shaping without benefit of a shaper tip, as is done in the Baroque oboe world.
In this case, a beveled knife might well be the ideal tool. If I were to attempt to do that, I would hold the folded cane in my left hand (I'm right handed) and, holding the knife in my right, with the open end of the cane resting on my right thumb, pull the blade at right angles to the cane from fold to open end on your thumb, scraping, not cutting, several times, then switch edges scraping both edges alternately and counting strokes for symmetry.
How you would arrive at a final shape I have no idea, but early instrument players have done it for hundreds of years, so we know it is doable...
