I've never tried a Fossati oboe - what worries me on their older top models with the pearl inlaid fingerplates is how to remove/fit pads without scorching the pearls. Unless they install the pads with liquid shellac.
With fully auto 8ves on oboes, the mechanism is a right pain to set up as there's very little (or no) margin for error and some may have up to 6 adjusting screws for the 8ve mechanism alone - whereas the 8ve mechanism on saxes is far more forgiving, far more reliable and has no adjusting screws.
