Hi Robin,

I would expect that early reflections from the walls are interfering with your sound. Where the reflected harmonics are in phase with the original you will get a boost, and where they are out of phase you will have cancellations.
In a larger hall the reflections return later in time and have fewer immediate effects, and as the time gets longer the ear starts to treat the reflected sound as a separate source (which is a truly remarkable process in itself).
Your best bet, in the absence of a good sounding hall, might be to record fairly dry, and to invest in some good quality reverb. If you're using a recording software package then there may be some decent reverb add-ons available.
I was involved in some studio recording -- a very very loooong time ago! -- and I always found that good reverb would make for happy oboe players!
