Mike,
It has to do with the direction of wind (long eye). Conventional wisdom says start about 2 to 3 mm. back from the tip of the staple, make 2 to three winds towards the tip of the staple & when you get the reed to close completely on both sides a thread width or slightly more from the tip, then "cross (back) over" the previous winds & go all the way back to the cork, leaving at least a mm. or so of exposed staple before the cork to to tie a clove hitch or two, thus securing the thread between itself & the top of the cork. If you are right handed, you are winding toward your right hand (or the hand doing the winding) to start, then with the cross over you are winding back towards the cork, towards your left hand (or the hand holding onto the mandrel/staple).

who rolls his own from the git-go (short of harvesting the cane, however) using a Dan Ross arrowhead splitter/planer/guillotine/gouger & David Weber 1B shaper tip on 47 mm. Stevens #2 brass thinwall (raised spirals) natural cork staples…pretty much enough to keep me from chasing girls & therefore out of trouble.
