Jay, I'll take your hard cane!
I'll take hard cane over soft cane any day. It gouges up smoother generally, produces, more vibrations, and lasts longer.
Harder cane I usually keep a little more in the center of the tip but thin the sides and corners of the tip REALLY thin. This deadens the vibrations a bit and gives a nice balance. You can also usually take a bit more out of the back of the reed but because the fibers are harder and stronger, the reed won't collapse.
I know the hardness of the piece of cane when I gouge it up. The pieces that are too soft go into my "for student reeds only" pile.
