Depends on the cane..but generally I use a thicker gouge for chamber reeds, and a thinner one for orchestral reeds. (Usually 0.59 and 0.57 respectively)
It sounds strange, but consider this:
-given a reed that plays well with a tip at 0.02mm, a heart at 0.50, and a back at 0.20 (arbitrary figures of course)
--the reed with the thinner gouge will be composed of harder cane, thus being louder.
--the reed with the thicker gouge will be composed of softer cane, thus being, well...softer.
It means that I don't scrape orchestral reeds a whole lot, whereas I really have to take cane away for my chamber reeds.
Having said that, I generally stick to one gouge, and only alter it if I'm really doing a lot of playing in a certain repertoire style.
