Regarding shaptons stones, I'm so sold and can't endorse them enough. Having an ultra sharp knife I sit down makes my reeds better and faster and can cut my reedmaking time from 15-20 mins to about 7-10. I get bout 3 or 4 reeds before I have to re polish on the 5000, 8000, and 15000, which takes me about 2 mins per knife. If I had the 32000 I'd probably use it for gouging blades as well.
At asu we use them in a cookie sheet and a spray bottle, at home I prefer to use the kitchen sink to drizzle in the stone and the cutting board so that I don't have to stop every 30 seconds and re spray. With the new diamond stone resurfacer, you can reset your stone in about 1 min flat after you've sharpened you knives for the day. (I do 6 or 7 at a time.) this is much cleaner and easier than the old method with the lapping plate and powders. Spendy yes, but for someone who makes 200 reeds a month, the stones and everything will last me several years before I'll need to buy replacements.
