Well, you can't base a decision on an instrument you haven't ever played before, have you? If you're enamoured by the oboe then please try the instrument as soon as possible, get the feel of it, whether you like to play it or not, and do it in consultation with a teacher, although figuring out what you want to play for the rest of your life isn't something that can be rushed.
Fingerings is a trival thing that can be worked out easily. Reeds not so. You will be playing on reeds made for you because it takes a long time to become just decent in reedmaking.
It took me about 3 years from making awful noises self-teaching myself at home, then joining groups and taking weekly lessons for myself to realize that, yes, professional oboe could be a career route for me (realizing I want to and having the capability to). This was all being done while I was (and still am) working on my PhD of an entirely different nature.
That being said, having a strong background in music will allow you to pick up almost any instrument without a lot of fuss. Becoming good at said instrument is entirely another matter. Deciding that this will be the rest of your life is another step beyond that.
