Apparently, Muse-score does perform hair-pin dynamics.
I'll have to try that out. If yes, then all that is missing is rubato. But they do have "text expressions" that get performed and you can tweak them. They have textual tempo words that play to metronome markings. If you use those enough.... well, no good for printing.... but it might be very good for home recording!
Really powerful freeware!
