Robin,
I am on my 3rd high-end midi setup and have never seen what you describe.
But I can clearly envision it and an algorithmic set of standard (musical) curves to apply to a selected range of midi events would be wonderful.
We get that level of control with cross-fades of edited audio and it really helps.
Meanwhile, I tediously edit performance values in the midi velocity data and at least can view it graphically. Seeing the curves really helps approximate the result, and then its up to the ear.
If you do find what you are looking for, I will be excited to learn of it.
Some music notation programs (not cheap, not free) allow a full performance to be edited...dynamics, rit., accell, rit, etc. Even working with that level of control, I find editing midi velocity data to be superior. From all I hear, the Sibelius program with full-features is the best of the lot.
