I always trim my blanks a tiny bit, clip them and set the overlap. I find that if I let them dry without the overlap set, they never seal well.
While it is true that once they dry out the tip can take on a very open profile, I find that once I start scraping and soaking them they return to normal opening very fast - in fact, they often have a longer playing life due to their extra strength. The trick is to make them slowly over several days, to squeeze them down before trying them out in the instrument, and to resist the temptation to take off too much cane because of the open tip.
Blanks will last forever, but a made-and-played reed seems to deteriorate whether you play it or not. I read somewhere that if you keep them in a refrigerator (one of those powered "wine cellars" is probably ideal) they last more or less forever, even if you play them.
