I tried a Rigoutat Riec (full Gillet system with all bells and whistles) a while back and it played like an absolute dream - and definitely comparable to a top pro model in both it's tone and response.

Some student and intermediate oboes don't have any or as much undercutting done to them so may not offer the same degree of flexibility as pro models, and other things like fewer steps in the manufacture, less soldered joints in the keywork, thinner plating, jig-mounted keys, no socket liners, wood of a lesser quality than used on pro models, less springs (and more springs of the same gauge), less attention to detail when finishing (ie. leaving screw heads unpolished) etc., etc.

Though it's swings and roundabouts - some student/intermediate oboes may indeed play much better than some pro models.
