 When playing in the orchestra, my seat is on the riser at the end of the row (2nd ob & EH).  People just don't walk by of hang around too much up there, so I feel safe leaving my instruments on the stand OR in pieces on my chair.  My colleagues are quite careful.  And if I am doubling, I am less inclined to put both away just to get them back out. 
 
In a setting where I am on the floor or in the pit, I do not leave my oboe out at all.
