I find I have best results if I just think about thinning the sides of the heart. So it's not like you d-i-g cane out of the sides of the heart - after all, there has to be a heart, but just think of it as another place to loosen vibration. This only works, though, if you don't put "windows" in the heart. Some people scrape out channels through the heart (as if a continuation of the back) but I can't really see how much it functionally improves the reed. It only further weakens the structure of the heart area, that should, given it's name, be the strongest part of the reed.
